<span style="color: #008000;"><em>Directions</em></span><br />
In medium bowl, combine the potato flakes, flour, garlic powder, seasoning salt, black pepper, and cayenne pepper.<br />
Soak fish filets in bowl of cold water.<br />
In a deep skillet or deep fryer, melt and heat the shortening to 350 degrees F (175 degrees C).<br />
Dredge fish filets in dry mixture and fry in the hot oil for 5 minutes or until fish flakes apart easily. Remove from oil and place on paper towels to absorb excess oil.<br />

<p>Ingredients:</p>

<p>One whole chicken(medium size)<br />
Onion &#8211; 200 gm<br />
Tomatoes &#8211; 175 gm<br />
Curd &#8211; 100 gm<br />
Chilly Powder &#8211; 1 tsp<br />
Coriander, Cumin &#8211; 1 1/2 tsp<br />
Turmeric Powder &#8211; 1/4 tsp<br />
Garam Masala &#8211; 1/2 tsp<br />
Garlic &#8211; 15 flakes<br />
Ginger &#8211; 1 inch piece<br />
Vanaspathi &#8211; 100 gm<br />
Salt &#8211; to taste<br />
Water &#8211; 250 ml</p>
<p><em><strong><span style="color: #993300;"> Directions:</span></strong></em></p>
<p>Cut chicken into pieces and wash. Grate onions, cut tomatoes. Grind ginger and garlic to paste.<br />
Heat vanaspathi and fry onions to golden brown. Add ginger garlic paste, tomatoes and curd.<br />
Fry till vanaspathi separates from masala.<br />
Add chicken, chilly powder, turmeric, coriander, cumin and salt.<br />
Fry till chicken is slighly brown. Bring to full cooking pressure.<br />
Reduce to medium heat and cook for 6 to 7 minutes. Allow cooker to cool gradually.<br />
Take it our, garnish with garam masala and serve.</p>

<p><em><strong><span style="color: #993300;"> Directions:</span></strong></em></p>
<p>Smear the fish with some lime juice and keep for some time. Mix the dried chillies, turmeric powder, pepper, onion, garlic and salt and grind it to a fine paste. Smear this paste on the fish and keep it for an hour. Add some oil in a frying pan and fry the fish on both the sides over a low flame. Once fried, remove the fish from the pan. Before serving, decorate it with curry leaves and lemon.</p>

• 1 tbsp Lemon Zest (grated)<br />
• 2 Spring Onions (halved through the middle and finely shredded)<br />
• 2 tbsp Light Soy Sauce<br />
• A handful of Fresh Basil Leaves (shredded)<br />
• 1 tbsp Peanut or Groundnut Oil<br />
• 1 tbsp Olive Oil<br />

<em><strong><span style="color: #999999;">How to make Ginger Fish:<br />
</span></strong></em>• Wash the fish properly and pat it dry with a kitchen paper. <br />
• Rub the coarse salt all over it and place it on a heatproof plate. <br />
• Scatter the shredded ginger, orange zest and lemon zest evenly on it. <br />
• Steam the fish for about 5 minutes. <br />
• Scatter the spring onions over the fish then drizzle with the soy sauce and sprinkle over the basil. <br />
• Heat the peanut or groundnut oil with the olive oil until just smoking then pour it over the fish and serve at once</p>

• 7 Cashewnuts<br />
• 1 /2 Dry Coconut<br />

<em><strong><span style="color: #339966;">How to make Shahi Fish:</span></strong></em><br />
• Cut fishes into pieces. <br />
• Wash the fish pieces and then pat them dry. <br />
• Heat oil in a pan for frying. <br />
• Add the fish pieces to the heated oil and fry till golden brown. <br />
• Take the fried fish pieces out of the pan. <br />
• Heat 1 tbsp oil in the same pan and fry chopped onions till they turn golden brown. <br />
• Remove the onions and keep separate. <br />
• In the remaining oil add asfoetida and cumin seeds. <br />
• Make a paste prepared by grinding all the ingredients of the paste in a mixie. <br />
• When seeds start fuming, add the paste and allow it to seethe for about 2 to 3 minutes. Add 2 tbsp water if necessary. <br />
• Also add the powder mixture and salt. <br />
• Fry the mixture on low flame till oil starts appearing on top. <br />
• Seethe it for another 3-4 minutes and then put the boiled pieces. <br />
• Add cream and mix it properly. Cook again for about 2-3 minutes. <br />
• Shahi fish is ready to serve.</p>

• 2 Dry Red Chilies<br />

<span style="color: #008000;"><strong><em>How to make Tandoori Fish:</em></strong> </span><br />
• Clean the fish properly. Make slits on either side of the fish. <br />
• Apply lemon juice and salt over the fish. Keep it aside for half an hour. <br />
• Make paste of ginger, green chilies and garlic. <br />
• Beat the curd thoroughly. <br />
• Add ginger-garlic paste and the powder of spices to it. <br />
• Mix oil and add color into it and strain the mixture through sieve. <br />
• Fill this in slits and smear all over the fish. <br />
• Leave aside for about 5 to 6 hours. <br />
• Put the fish in tandoor till it turns golden brown. <br />
• Tandoori fish is ready to serve.</p>

For Paste:<br />
• 2 tsp Aniseed (roasted)<br />
• 3 tsp Cumin seeds (roasted)<br />
• 2-3 tbsp Coconut (roasted)<br />
• 1 bBall of Tamarind<br />

<span style="color: #008000;">How to make Hyderabadi Fish:<br />
</span>• Soak tamarind in hot water taken in a bowl and squeeze out the pulp. Keep aside. <br />
• Marinate the fish slices with turmeric powder, salt &amp; lime juice. Keep aside for 15 min. <br />
• Grind all the roasted ingredients in a grinder until smooth and keep it aside. <br />
• Heat oil in a pan and add split green chilies, bay leaves and the above paste. <br />
• Fry for about 10 minutes till the oil starts separating. <br />
• Now add marinated fish pieces, sugar and remaining salt. Simmer it after adding a little water. <br />
• Add coconut milk and garam masala. Bring the mixture to a boil and take it off the fire. <br />
• Hyderabadi Fish is ready to serve.</p>

• Remove the skin and bones. <br />
• Mash the fish and add salt. Mix well and Keep it aside. <br />
• Heat oil in a pan. Add garlic and mustard paste to it. <br />
• Fry on a low flame for about one minute. <br />
• Mix this with the mashed fish. <br />
• Also add chopped green chillies and lemon juice. Mix properly. <br />
• Fish Pitika is ready to serve. <br />

• 1/2 kg Fish<br />
• 1 Egg<br />
• 1 Bread slice<br />
• 1 tsp Garlic paste<br />
• 1 tsp Ginger paste<br />
• 1 Cup Bread Crumbs<br />
• 1-2 Green Chillies<br />
• 1 tbsp Corn Flour<br />
• 1/2 tsp Garam Masala<br />
• 1/2 tsp Turmeric Powder<br />
• 1 Bunch of Coriander Leaves<br />
• Salt to taste<br />
• Oil for frying<br />

<em><strong><span style="text-decoration: underline;"><span style="color: #ff9900;">How to make Fish Cutlet:<br />
</span></span></strong></em>• Smear and rub fish with turmeric powder and salt. Wash it after 5 minutes. <br />
• Keep the fish over a pan of hot water for steaming. Remove the bones and gently mash it using hands. Soak the bread slices in water and squeeze. <br />
• Add red chilli powder, garam masala powder, ginger-garlic paste, corn flour, coriander leaves, green chillies, bread slice and salt. <br />
• Mix all the above ingredients and make walnut sized balls and flatten the ball slightly. <br />
• Take the beaten egg. Dip the cutlet pieces in egg and roll in breadcrumbs. <br />
• Heat the oil slightly in a wok. Fry till the pieces turn brown. <br />
• Fish cutlet is ready. Serve it with potato fingers and chutney.</p>

 • 800 gms Fish (washed and sliced) ,<br />
• 1 Onion Sliced ,<br />
• 1 tsp Garlic (chopped) ,<br />
• 12 Dry Red Chillies ,<br />
• 1 Tomato (chopped),<br />
• 1 tsp Cumin Seeds ,<br />
• 1 tbsp Tamarind Paste<br />
• 1 tsp Turmeric Powder<br />
• 4 Green Chillies<br />
• 1 tbsp Oil<br />
• 2 tbsp Coriander Seeds<br />
• 1 tbsp Ginger(minced)<br />
• Salt to taste<br />

<em><strong>How to make Fish Curry:<br />
</strong></em>• Grind dry red chillies, coriander seeds, cumin seeds, ginger, garlic, and turmeric powder with water to make a fine paste. <br />
• Rub the slices of the fish with some salt and a pinch of turmeric powder and keep aside for 5 minutes. <br />
• Wash well and drain the water. <br />
• Heat the oil in a wok and saute the onions till they turns golden brown. <br />
• Add the paste and the chopped tomatoes. Saute slightly. <br />
• Now add tamarind paste and water to it and bring it to a boil. <br />
• Add the fish, green chillies and salt. <br />
• Mix very gently and simmer on moderate heat for about 6 minutes or till the fish is cooked .</p>
